A reimagination of the cafe and coffee roastery

Prototype Coffee is a unique space where we can create, and share coffee in a way that excites us.

Our menu features over 14 different top quality coffees at any given time. These coffees are carefully sourced by our import partners, who develop long term, and healthy relationships with farmers and exporters around the world.

Our roasting bar is located in the same space where we brew all our coffees. It’s a transparent and lean production system that allows us to carry a large selection of different coffees without the waste that can result from committing to bigger batches. This system of three efficient roasters can produce a lot of coffee quite quickly, giving us incredible control over the roast profile during the roast.

Our process allows us to spend time learning what each coffee has to offer, and how it behaves in the roaster. Once we have an understanding of each coffee’s potential, we create a roast profile that showcases its origin flavours in the most flattering way, maximizing sweetness and balance.

Ultimately our goal is to deliver you a delicious and spectacular cup of coffee that is as fresh and exciting as the beans and process we’ve uniquely developed.

Our Cafe Offerings

An assortment of unique handcrafted favourites

In addition to our coffee program, we take great pride in our waffle donuts. All our recipes are made from scratch and designed by us from the ground up to taste like everything you want in a cake donut while being cooked on our bar in a waffle iron. Our flavours are seasonal and feature fresh local ingredients as much as possible.

We also serve a variety of bottled ready-to-drink beverages that are designed to provide an elegant and pre-prepared experience of our coffee and tea outside of the walls of our tasting room. All our drinks are prepared with care by our baristas and are available exclusively available in our tasting room and for local delivery on Uber Eats and DoorDash. We’ve come up with some mainstays that we’ll have year-round and also some seasonal recipes that are available for a more limited time.
